Tisk Tisk On Me....

Hello Friends,

So, I have been late on posts lately, and it's not right for me to promise a post, and it not be there. So I will say now that I'm very busy right now, and posts will be late for a little while, but not more than a day late.
Right now I'm trying to get a job so I can buy a car, then I will have more time from not riding the bus, and having it take an hour for a normally 15 minute drive! So you're tired, you come home, you don't want to cook, but you're super hungry, and you have to eat something that will hold you over for a few hours.  I have the perfect recipe for that! Strawberry Lassi!


Ingredients:

  • 1 lb of strawberries (hulled). 
  • 2 tablespoons of honey. 
  • 1 cup of plain greek yogurt. 
  • 2 tablespoons of milk. 
Blend everything in a blender until smooth. Serve on ice. Enjoy!

The Best Guacamole.

Hello Friends,

So Summer is approaching! Now for you that might mean camping, traveling or just nice days with friends, and something that is always perfect is picnics! So here's a classic picnic food that you'll love!


Ingredients:

  • 2 ripe avocados. 
  • 1/2 a large ripe tomato (minced). 
  • 1/2 - 1 whole jalapeno (minced).
  • 1 clove of garlic (minced).
  • 1 lime. 

Slice both the avocados and remove the pit from both. Remove the skin from the avocado and mash until it's all creamy. Add in the tomato,jalapeno and garlic and mix well. Slice the lime and squeeze fresh lime juice in and mix well. Serve with your favorite corn chips! Enjoy!

The Best Ginger Cookies!

Hello Friends,

Once again, I'm so busy I didn't have time to write a post :( But I'm making it up to you! These cookies are soooooo good!


Ingredients:
  • 2 1/2 cups of Brown Rice Flour Blend.
  • 2 teaspoons of baking soda.
  • 1/2 teaspoon of salt. 
  • 1 1/2 sticks of butter. 
  • 2 tablespoons of ground ginger. 
  • 1 teaspoon of ground cinnamon. 
  • 1/4 teaspoon of ground cloves. 
  • 1/4 teaspoon of pepper. 
  • pinch of cayenne pepper. 
  • 1 1/4 cups of packed dark brown sugar. 
  • 1/4 cup of molasses. 
  • 2 tablespoons of freshly grated ginger.
  • 2 eggs. 
  • 1/2 cup of granulated sugar. 
  • 1 cup of plain potato chips. 

Cream the butter and sugars in a large mixing bowl. In another bowl mix together the baking soda, flour blend, salt, ground ginger, ground cinnamon, ground cloves, both the pepper and cayenne pepper and whisk to combine. Add the molasses. grated ginger and eggs to the sugar and butter mixture and beat with an electric mixer until combined. Slowly add the flour mixture while beating with an electric mixer into the wet ingredients. You will probably have to switch to hands to mix the dough better. Once you have a dough ball, make a little volcano like shape and pour the potato chips in in and began to fold the potato chips in the dough. Don't over fold and crush all the potato chips, you still want big pieces. Preheat the oven for 350F
on a parchment paper lined cookie sheet line up little dough balls on the tray and bake for 15-20 minutes.
Repeat baking process until all the dough is gone. Serve warm! Enjoy!

I give you permission to hate me!

Hello Friends,

Once again I've been going through some stuff. I'm very sorry this post is so darn late!
Peanut Butter and Chocolate Popsicle!


Ingredients:

  • 8 oz of cream cheese softened. 
  • 1 cup of creamy peanut butter. 
  • 1/2 cup of powdered sugar. 
  • 1/2 teaspoon of vanilla. 
  • 3/4 cups of heavy cream. 
  • 4 oz of chocolate chips. 

In a large bowl beat all the Ingredients, except the chocolate chips. Take small paper cups and pour 3/4 of the way full and freeze for 10 minutes. after 10 minutes take out the filled cups and place a Popsicle stick half way in the cup and freeze over night. Once they have hardened completely. Melt the chocolate in a microwave for 10 seconds and stir, repeat until completely melted. Remove each Popsicle from each cup. Dip each Popsicle in the chocolate and place in the freezer until the chocolate sets! And there you have it! Enjoy on a hot day!

Fancy Grilled Cheeses.

Hello Friends,

Tuesday's post this week is a little early because I'm going to be so busy, that I won't have time for even writing it! So today's is a couple different recipes actually! I thought some good lunch ideas would be fun!



Pear and Swiss Grilled Cheese:

  • 1 ripe pear. 
  • 2 slices Swiss cheese. 
  • 1/4 cup of potato chips. 
  • 2 slices of your favorite GF bread. 
  • a little butter. 

In a small pan heat to medium heat. Melt the butter. Slice the pear thinly and layer in on the bread with the cheese and potato chips. Brown both sides of the sandwich. Done, enjoy hot and gooey!
Next Sandwich:

Avocado and Queso Fresco:

  • 1/2 of an avocado. 
  • 1/4 cup of Queso Fresco. 
  • 2 tablespoons of salsa.
  • a little butter. 
  • 2 slices of your favorite GF bread.
In a small pan heat to medium heat. Melt the butter. Slice the avocado think and layer it between the two slices of bread with the Queso Fresco and salsa. Brown on both sides and serve hot! 
Last but not least:

Grilled Margarita: 
  • 1 large tomato. 
  • 3 slices of fresh mozzarella. 
  • 1 tablespoon of olive oil.
  • 2 slices of your favorite GF bread. 
  • salt and pepper to taste.
Heat a small pan on medium and drizzle olive oil in it. Slice the tomato and assemble the sandwich by layering the sliced tomato and mozzarella. Salt and pepper to taste. Stuffed Peppers.

Hello Friends,

I wanted to start out this post saying "thank you". This blog has become so much bigger than I could have ever hoped for! It's a huge honor to know that I'm helping someones' day become a little bit easier. Love all you guys! <3 So here's today's recipe: stuffed peppers!


Ingredients:

  • 1/4 pound of ground beef. 
  • 1 cup of cooked white rice. 
  • 1/2 cup of corn. 
  • 1 small minced onion. 
  • 4 bell peppers. 
  • 1 cup of your favorite pasta sauce. 
  • 2 cloves of garlic minced.
  • 1/3 cup of red wine (optional). 

Heat a large pan on medium heat greased with a little oil. Preheat the oven for 350F. Saute the minced onion and garlic, until tender and slightly yellow. Add the ground beef and saute until it's no longer pink. Add the pre-cooked white rice, corn, wine and pasta sauce. Simmer until most of the liquid is cooked off. Cup the top off each bell pepper like a lid, and set aside. Take out all the seeds in the pepper and fill with the filling. Place the "lid" back on and bake in a baking dish for 15-20 minutes. Serve hot! Enjoy!

Crepes!

Hello Friends,

I've been going through some crazy stuff lately, so I'm very sorry that I didn't post this yesterday like I should have! I had planned to post this recipe about a month ago, but when I made it for the first time I grabbed a random flour blend I had in the pantry and used it. Sadly the flour blend wasn't labeled so I didn't know what flour it was. So I re made it this time knowing what flours I used! So here it is!


Ingredients:

  • 1 1/3 cups of whole milk. 
  • 4 eggs. 
  • 2 tablespoons of oil.
  • 1 cup of mochiko aka sweet rice flour. 
  • 1/2 teaspoon of salt. 

Mix everything in a bowl until smooth. heat a medium sized pan on medium heat and grease with a little oil. 
Once the pan is nice and hot, pour about 1/4 cup of the batter and swirl it around so it coats the bottom of the pan evenly. Cool for 2 minutes then flip and cook for another minute. You can serve it with strawberries and whipped cream. I like mine with a little honey and butter. Enjoy!

Quinoa Stuffed Zucchini!

Hello Friends,

Forgive me, this post is late! I'm going through a break up and it's really rough. Today has been interesting I've been so tired all day long, but things get better and change is good! So this recipe is a little different, but it's very delicious!


Ingredients:

  • 2 large zucchinis. 
  • 1/2 cup of dried quinoa.
  • 1 cup of chicken broth.
  • 1 can of white kidney beans. 
  • 1 cup of halved cherry tomatoes. 
  • 1/2 teaspoon of garlic powder. 
  • 1/2 cup of chopped almonds.
  • 3/4 cups of grated Parmesan.

Preheat oven to 400 F. Cook the quinoa in the chicken broth until the almost all the water has evaporated and then pull off the burner and let set for 5 minutes then fluff. In a large bowl, mix the cooked quinoa, white kidney beans, cherry tomatoes, garlic powder, chopped almonds and 1/2 cup of the Parmesan  Wash the zucchini and cut in half length wise, scoop out the seeds and fill with the quinoa mixture. Sprinkle the rest of the parmesan on top and bake in a baking dish covered in foil for 20 minutes. Remove foil and bake for another 8 minutes. Serve hot and fresh! Enjoy!

Pocket Sloppy Joes

Hello Friends,

Even though I'm tired enough to fall asleep at the cafe I at now, I'm still going to write this blog post!
I probably made about 4 new episodes of my gaming series today without making sure I was getting ready on time; whoops! But here I am :D Everyone in my family wanted 100 of these pockets! They are perfect for a young child or a lunch box!


Ingredients: 
  • 1 white onion (minced). 
  • 1 pound of ground beef.
  • 1 teaspoon of salt. 
  • 1/2 teaspoon of ground black pepper. 
  • 1 teaspoon of cayenne pepper. 
  • 1/2 teaspoon of mustard powder.
  • 2 tablespoons of Worcestershire sauce. 
  • 2 tablespoons of brown sugar. 
  • 1 small can of tomato paste. 
  • 1 package of Chebe Original Cheese Bread Mix. 
  • 1 cup of shredded cheese.
  • 2 tablespoons of oil.
  • 3 large eggs.
  • 1/4 cup of water.

Preheat oven for 375 F. In a large pan saute the minced onions in a little bit of oil. Add the ground beef and saute until the beef is no longer pink. Add the salt, black pepper, cayenne pepper, mustard powder, Worcestershire sauce, brown sugar and tomato paste. Simmer the seasoned beef for 5 minutes. In the mean time make the Chebe Original Cheese Bread Mix according to box using the 2 tablespoons of oil, 2 eggs and 1/4 cup of water. The third egg is for an egg wash at the end. Kneed the cheese bread dough until it's no longer sticky. Break the dough into 8 balls. Roll out each circle between 2 pieces of plastic wrap. Place 1/8 of the sloppy joe meat on each circle and close up each one; making a half moon shape. Place on baking sheet lined with parchment paper. Beat the remaining egg and brush each raw pocket with the egg wash. Bake for 20-25 minutes. Let cool for 5 minutes before eating. Enjoy!

Easy Chicken Dinner.

Hello Friends,

So last night was okay, I got a new dog and had to make sure it didn't have an accident. So I had to let it out in the middle of the night several times. Yay no sleep! -_- But the dog is worth it! She's super cute, and tries to make me laugh. But back to business, this dish was very quick and delicious! I recommend it if to anyone that has picky family members!


Ingredients:

  • 2 large boneless skinless chicken breasts (cubed).
  • 1 teaspoon of cumin. 
  • 1/4 teaspoon of cayenne pepper.
  • 2 cans of black beans (drained).
  • 1 sprig of cilantro (chopped).
  • 1 cup of corn. 
  • 1/2 cup of cherry tomatoes (halved).
  • Half a red onion (minced).
  • Salt and pepper to taste.

Mix the cumin and cayenne pepper in a small bowl and toss it in the cubed chicken breasts. Heat a large pan with a but of oil on medium heat. Once the pan is hot toss in the chicken breast and cook until golden on each side of cubes. Take the cooked chicken out of the pan and set it on a plate for later. In the same pan saute the red onion until soft. Add the black beans, tomatoes, cilantro and corn. Saute all until bubbly and hot! Serve the bean mixture in a bowl with some chicken on top! Salt and pepper to taste. Enjoy!

My head was in the clouds.

Hello Friends,

So I'm turning 16 soon and Collage is very soon for me, so I started to go through the ideas of what I wanted to be. For most of my life I wanted to be a Vet, but sadly I'm very squeamish so I had to give that up. For a while I wanted to be an Architect, Cosmetologist, or Studio Artist. Sadly doing those things made me happy, but something was always missing. I always found myself happiest when I cooked/baked so one day it hit me, and I decided to become a Chef. But many things happened, and I couldn't follow my passion. This blog will still be up, and I'll still post recipes and cook, but I'm going off to Engineering school. This blog has been very fun to write on and I hope that I can have the time to still write on it for years to come! Oh! But of course! The main reason I was bringing this all up was because, I'm getting a puppy tomorrow, and because of that, I've been very busy. So I apologize, for this post being late!
This is a great dinner dish! My family loved it!


Ingredients:

  • 4 tablespoons of olive oil (try to get the good stuff with pulp on the bottom).
  • 2 1 inch thick strip steaks. 
  • 1 can of chickpeas (drained).
  • 4 medium tomatoes. 
  • 1 sprig of fresh cilantro. 
  • 3 tablespoons of fresh lemon juice. 
  • 1 cup of crumbled feta. 
  • Salt and pepper to taste. 

Heat a large pan on MED-HI with 2 tablespoons of olive oil. Salt and pepper the steaks and set aside. Once the pan is nice and hot lay both pieces of  the strip steak in the pan. Cook on each side for 5-7 minutes for perfect medium-rare steaks. Once you've cooked the steak, take it out of the pan and set on a cutting board for 5 minutes before slicing. In the mean time slice the tomatoes and chop the cilantro, toss together with the chickpeas in a large bowl. Add the remaining oil in the pan used to cook the meat. Place the veggies in the pan and let them become soft and hot 7-10 minutes. Add the lemon juice to the veggies then salt and pepper to taste. Slice the steak into 1/4 inch slices and serve along side the veggies. Top the veggies with feta. Enjoy! By the way I made this recipe when I have very limited time so it's great for a busy weeknight!

French Macaroons.

Hello Friends,

Now things go wrong, and when they do you often feel confused or worried. In my case the last couple of days have been very rough :( But that's no reason you can't be happy! Enjoy some of these really delicate cookies! Perfect for a cool April day! 


Ingredients:
  • 2 1/2 teaspoons of granulated sugar. 
  • 1 cup of powdered sugar. 
  • 3/4 cups of almond meal/flour. 
  • 2 large egg whites room temp. 

Start by mixing the almond flour and powdered sugar together. Take the mixture and thoroughly sift twice (THIS STEP IS A MUST) There might be a little pile of larger pieces of almonds in the sifter coated in powdered sugar, I recommend to snack on this as you work; it's so numy! Set aside the sifted almonds and powdered sugar. In a large mixing bowl beat the egg whites to a foamy consistency add the granulated sugar and beat until you have stiff peaks. Note: this recipe is for plain macaroon shells if you want them a certain color or flavor add it in when you add the sugar to the egg whites when the egg whites are foamy.

 Once you have your stiff egg whites fold the egg whites in the almond and powdered sugar mixture. This step is very important because if you stir it too long the mixture gets too soupy and you won't get the perfect macaroon! If you don't stir enough the shells will crack :( So here's what you want to do. Fold the mixture until when you lift up your spatula it take 30 seconds for the mixture to drip back into the bowl and 60 seconds to become a smooth mixture again. This is when the batter in perfect! You're gonna want to take a parchment lines baking sheet. Put half the batter in a piping bag and pipe dollar coin sized circles on the parchment. Now I know this might be hard for you, but take the sheet with the batter on it and bang it to make sure all the air bubbles are out of the circles.  Let them stand on the sheet before baking for 15-20 minutes.

 Once you have let them sit, bake at 300 for 15 minutes. Let cool for 2-3 minutes! They should have those cute little feet on them. Like shown in the picture. You can fill them with a custard, pastry cream or nutella like me! Enjoy!

Super Easy Gooey Chocolate Cake!

Hello Friends,

As you all know by now I'm a 15 year old girl that lives in a Hippie Town. Now, my town (Austin, TX) is also known as the live music capital of the world. It's also known for it's good food! Austin food is very different, it's commonly from the minds of a collage grad from UT, wanting something cheap, easy and good! I find myself eating as restaurants with food with only a few ingredients, and I tell you it's some of the best food I've ever had! So this is why I've come to the conclusion that, why not make these easy foods at home how you like and gluten-free? So this is what I bring you! Super Easy Gooey Chocolate Cake!


Ingredients:

  • 4 large eggs.
  • 1 cup plus 1 tablespoon of nutella or other chocolate hazelnut spread. 
  • 2 cups of milk chocolate chips.
  • 1 tablespoon of heavy cream (or coconut oil). 
  • Powdered sugar for plating. 

Preheat oven for 350 F. Crack all 4 eggs and whip until you have soft peaks. In another small bowl put the nutella in and heat in the microwave for 20 seconds or stove top for 30 seconds just until the nutella is super gooey! But not too hot that it will cook the egg. Take your gooey nutella and fold in 1/3 of the whipped eggs until you have a mixture that is smooth in color. Repeat with the other 2/3 of the eggs. You will be left with a fluffy mocha colored batter. With a spring form pan lined with greased parchment paper, pour the mixture slowly in the pan. Bake for 20- 25 minutes. In the mean time melt you chocolate chips and add your heavy cream. Stir until smooth. Once the cake in done pour the chocolate and heavy cream mixture on top and refrigerate until it hardens 1-2 hours depending on how cold your freezer is. Sprinkle powdered sugar before plating. Super gooey and delicious! Enjoy!

Smoothie.

Hello Friends,

So there's a local smoothie chain in my town called JuiceLand and my mom has a regular craving for one of their drinks called The Moontower. My mom got tired of spending 7 dollars a day for a drink she could create at home for less. Me and her worked together to get the taste right and Tadaaaa!

Ingredients:

  • 1 frozen banana (sliced). 
  • 1/4 cup of rice milk.
  • 2 tablespoons of peanut butter.
  • 1 teaspoon of rice protein powder. 
  • 1/2 teaspoon of cacao powder. 
  • 3 whole dates. 

In a blender, blend the banana and rice milk until smooth, add the peanut butter, protein powder and cacao and blend until there are no lumps. Add the dates and pulse until the dates are chopped. Serve right away! 
If the mixture is a little too think add a little more rice milk until it's how you like it. Enjoy!

French Apple Tart.

Hello Friends,

Yes, you have every right to be mad. I was very busy yesterday and I wasn't feeling very well. So I apologize! So a tart is a lot different than a pie, a tart is thin, delicate, and semi sweet; and a pie is thick, commonly has just about any flavor and is normally very sweet! I prefer a tart because of the filling is always fruit, and I can always rely on that. This tart is perfect for the weather Austin has been having lately; cool rainy and grey this tart is the perfect thing to cheer things up!


Ingredients:

  • The rest of the dough used in the Fruit tart recipe. 
  • 4 apples. 
  • 1/4 + 2 tablespoons of sugar. 
  • 1/2 teaspoon of cinnamon. 
  • 2 tablespoons of grape juice. 
  • 1/2 cup of water. 
  • 1/8 of a teaspoon of salt.
  • 2 tablespoons of butter. 

In a tart pan roll out the dough and bake as said in the Fruit Tart recipe (link above). In a small pot bring the  grape juice and water to a boil. Skin and cube 2 of the apples and add it to the pot and lower the heat to a simmer. Add the cinnamon, 1/4 cup of sugar, salt and butter to the pot and let it cook in low heat until the apples are soft. Mash the mixture and let sit to thicken. Once the tart shell is done put the mashed apple mixture on the bottom and spread it evenly. Thinly slice the other 2 apples and lay the slices as the provided picture shows. Sprinkle tart with the remaining sugar and bake at 300 until the apples are soft on top, about 15-20 minutes, but don't let the tart shell burn. Let the tart cool to room temperature. Serve with fresh cream  or by it's self. Enjoy!

Request: Chicken Stir-Fry

Hello Friends,

Reading the title you can already tell this was a request; from a follower named Gabriel. Well Gabriel, you have come to the right place for a stir-fry recipe. I love stir-fry, it's the perfect healthy meal for a busy night!
Now there are different kinds of stir-fry, based on what kind of flavor you like the most common would be a Japanese stir-fry. There's also Vietnamese and Chinese style stir-fry, but Japanese is a good place to start.


Ingredients:

  • 2 whole skinless boneless chicken breasts (cubed).
  • 2 cups of fresh spinach.
  • 1/2 cup of broccoli (chopped).
  • 1 bell pepper (sliced).
  • Green onion (chopped into 1/2 inch pieces).
  • 2 cups of cooked white rice.
  • 1 tablespoon of cornstarch.
  • 1 tablespoon of soy sauce.
  • 1 tablespoon of Mirin (optional, just replace it with water).
  • 1/4 cup of chicken broth.
  • 1 teaspoon of sugar.
  • 2 teaspoons of sesame oil.

In a wok or large skillet stir-fry the chicken until white on both sides. Add the spinach, broccoli, bell pepper, and green onion and stir-fry on MED heat until the veggies are cooked and the spinach has wilted. Mix the cornstarch, soy sauce, mirin, chicken broth, sugar and sesame oil in a small bowl until the sugar dissolves. Add the mixture to the veggies and stir-fry again. The sauce will quickly thicken. Once the sauce is thick and it's all really hot serve it in a bed of rice. Enjoy! Also you can add different veggies if you like.

Banana Pancakes

Hello Friends,

So yesterday wasn't a very good day for me, it was one of  "those" days when everything seemed to make me sad :( But now I'm feeling better, a lot better actually! I've been on a very strict diet since Friday and it's not fun trust me! If you want the diet plan, just let me know in the comments, and I will write a separate post explaining it! But basically in the diet the only things you can eat are fruit, meat, veggies and nuts. So, finding stuff to eat is kinda hard, but I went searching on different cooking websites and blogs and I found something perfect! Now, I can't take credit for this recipe because to be honest this recipe is so bizarre I would have never figured in out on my own! This recipe was found searching "TheOfficialHungry" youtube channel one of the series called "The Brothers Green" had a video making recipes with only 4 ingredients I found there banana pancakes recipe, and simplified it to only 2 ingredients!


Ingredients:

  • 2 bananas. 
  • 2 eggs. 

In a small mixing bowl smash the bananas into a smooth paste, add the eggs and whip the mixture until fully combined. Heat a greased pan on MED heat. Pour a 1/4 cup of the batter into the pan. Let bubbles pop on the top of the cake before flipping. Make sure both sides are golden color before serving. You can serve with anything you want including strawberries and whipped cream ;) Enjoy! Spicy Tacos!

Hello Friends,

This recipe is a easy way to get a fresh healthy meal! I love it! This week has been very different from the rest. Still very busy as usual, but I was a little more relaxed about stuff than usual, and I thinks it's from me eating a little healthier here and there. We hit over 1000 so, contests should start next week, if not than for sure during April. What would you guys want the first prize to be?

Ingredients:

  • 10 yellow corn tortillas.
  • 2 acorn squash.
  • 2 cans of whole black beans.
  • 3 whole limes.
  • 1 spring of fresh cilantro.
  • 5 tablespoons of goat cheese.
  • 1-3 teaspoons of Sriracha sauce.
  • 2 tablespoons of honey.
  • 2 tablespoons of apple cider vinegar.

Cube the acorn squash and set aside. In a large bowl mix the Sriracha, honey and vinegar add the acorn squash and let marinade for 1-2 hours. Fry the squash until soft and hot, set aside. Heat the beans in a pot. Add the juice of the limes in the black beans. Roughly chop the cilantro and add to the beans. Toast the tortillas in a oven set for 350 F for 1 minute and now make your tacos! Layer the squash, beans and crumble the goat cheese on top. You can add a bit more lime juice on top if you like. Enjoy!

Chicken Parmesan.

Hello Friends,

This is a classic Italian dish that most people have heard of! It's perfect if you don't have a lot of time to make dinner. It's high in protein and delicious! I made this the other day for the first time and I ran into a little problem. The week before I had made gluten-free sandwich bread like I normally do, but people weren't feeling up for bread that week so the bread went stale. I decided that the best thing to do with it was to turn it into bread crumbs, so I did. So, when I went to make the Chicken Parmesan I planned on using the bread crumbs that I had made I found that the bread being homemade doesn't last very long so, the bread crumbs had mold :( So I quickly went through my pantry looking for alternatives. In the past I have used crushed Chex rice cereal and that worked pretty good. but I didn't have any....So I grabbed the closest thing! I had tried making oat flour in my food processor, but I couldn't get it fine enough to be a flour, so I put it in a tubberware for another day. Yes, I used fine oatmeal as bread crumbs. Call me crazy, but it was perfect!



Ingredients:

  • 6 skinless and boneless chicken breasts.
  • 1 egg
  • 1 cup of whole milk, you can use coconut or almond milk.
  • 4 cups of gluten-free bread crumbs, you can use also crushed rice Chex or ground oatmeal. 
  • 1 teaspoon of oregano.
  • 1/2 teaspoon of thyme.
  • 1/2 teaspoon of garlic powder.
  • 1/4 teaspoon rosemary.
  • 3 cups of marinara.
  • 2 cups of mozzarella.
  • 1/2 cup of parmesan.

Heat a large pan with oil to MED heat. In a bowl whisk the milk and egg together and set aside. on a large plate mix the bread crumbs, oregano, thyme, garlic powder and rosemary. Make an assembly line of the milk mixture and the seasoned bread crumbs. Dip the chicken breast in the milk mixture then in the bread crumbs and evenly coat both sides, repeat with each piece if chicken. Fry the chicken in the heated pan until golden on each side. In a 9-13 inch baking dish spread a small amount of marinara. Lay the chicken breast on top of the marinara in the baking dish. Sprinkle half of the mozzarella on the chicken and cover with marinara, sprinkle with the rest of the mozzarella and parmesan. Bake at 350 F for 30 minutes or until the cheese is bubbly! Let cool for 5 minutes. Serve by it's self or on a bed of gluten-free pasta. Enjoy!

Sorry!!!!

Hello Friends,


I'm so very sorry about this post being late! I'm going out of town today and getting ready for the trip was keeping me busy! Flaming Lips played last night and I missed it!!!! :( But sometimes earning money is more important that a concert. Also don't forget that 50 more page views and I'm gonna start hosting contests! Whoo! This includes you being able to win stuff such as gf flour, baking wear and cooking wear, fun fun!
So, this recipe is very simple I will be honest, but it's sentimental for me and it's very very good! So I'm gonna share it with you!


Ingredients:

  • 1 head of broccoli.
  • 4 tablespoons of olive oil.
  • 1/2 teaspoon of both salt and pepper.
  • 1 fresh lemon.

Roughly chop the broccoli. Preheat the oven to 400F and line a baking sheet with foil. Toss the broccoli in oil, salt and pepper. Bake for 15 minutes or until a little golden. Once you pull out the tray, squeeze fresh lemon juice on top, makes for a wonderful side dish! So good!!! Enjoy!

Bubble (Boba) Tea!

Hello Friends,

Sorry about the really late post, Tuesday was not the best day. So if you have ever had bubble tea, you know how good it is, but at an average of  $4.00 for the tea plus if you want the reason why you came to get bubble tea that's gonna be another dollar for the little pearls. So 5 dollars for a drink that costs them roughly 25 cents to make is kinda (steep) for my opinion. So this is why I decided to start making my own! I started by going to my local Asian store. I was trying to look for the boba (if they sold it at all) and I did find it, but 5 dollars for a small pack I was still kinda un sure I still thought I could do better, and after searching google for a good 5 minutes I found a boba recipe I tried out different ways to make the tea/smoothie and make homemade boba yum! So I give you final result!



Ingredients: 

  • 1/2 cup of tapioca starch.
  • 1-3 tablespoons of hot water. 
  • 1 of your favorite tea bags (I normally use a peach ginger tea by Stash) 
  • 1 cup of whole milk.
  • 1/2 a cup + 3 tablespoons of brown sugar. 

Start by measuring the tapioca starch in a small bowl. Add the hot water a little at a time and make sure you don't get a dough that too sticky. I've made this so many times and each time the amount of water varies. Once you mixed the dough take it out of the bowl and kneed until a little tacky, but still not too sticky. Make pea sized balls with the dough. Boil the boba in a medium sized pot full of water and 1/2 cup of brown sugar. the boba will double in size. Once the boba have grown strain the water and rinse the boba. Steep your tea and add the remaining brown sugar. If you don't like it very sweet then don't add as much sugar. Put the desired amount of boba in each glass, evenly pour the tea in each glass and fill the rest of the glass with whole milk. Serves 2! This is a great treat for spring break! I really hope you like it! Enjoy!

Baked Lemon Chicken Breast

Hello Friends,

Oh, how I'm embarrassed, this post is late! I was so frazzled yesterday! So I apologize, and give you a delicious recipe! This recipe is easy for a busy weeknight! So here you go!


Ingredients:

  • 1 medium onion (sliced).
  • 1 large lemon (sliced).
  • 5 cloves of garlic (smashed).
  • 3 springs of rosemary. 
  • Olive oil.
  • 10 new potatoes (halved).
  • 3 skinless and boneless chicken breasts (washed and dried).

Start by preheating the oven for 425F. In a baking dish line the slices of onion and lemon in a pattern. Lay the rosemary and garlic on top. In a large bowl put the halved potatoes in and toss with some olive oil, set aside. Take your washed chicken breast and cover in olive oil. Arrange the chicken in the baking dish atop of the lemon, onion, garlic & rosemary. Place the potatoes in the baking dish also. Sprinkle with salt and pepper. Bake for 35-45 minutes or until the chicken is fully cooked (165 degrees). Serve the chicken with the potatoes, so gooooooood! Enjoy!

Sweet Japanese Omelet.

Hello Friends,

It's been a very tiring day for me, I was sent a screamer at 1am and couldn't calm myself enough to sleep until about 3am, yay! -_- So now I'm so tired I could fall asleep on my laptop! But even though I'm a zombie for the day I will write a post for you guys! It's simple, but good! 




Ingr(egg)dients:
  • 2 large eggs.
  • 1 teaspoon of white sugar.
  • 1 teaspoon on soy sauce.

Heat a small pan on MED heat and grease with butter. Mix all the ingredients shown above. Pour the mixture in the heated pan and let cook evenly on both sides. You can serve it as is or serve with rice and soy sauce! Yum! Enjoy!

Gluten-Free Sandwich Bread.

Hello Friends,

So being gluten-free has it's ups and downs feeling great is a plus, but prices for food sky rocket if you aren't careful, and of course bread being that one thing that you HAVE to buy because without it that means no toast, sandwiches ect, but at 6$ a loaf bread starts to become something of a question if it's really worth it. In my opinion I think it's ridiculous! So after being tired of bland gluten-free breads I decided to take matters into my own hands thus my fool proof recipe for gluten-free bread was born! This bread is light and fluffy with a nice flavor!


Ingredients:

  • 2 cups of rice flour.
  • 2/3 of a cup of potato starch (this is NOT the same as potato flour).
  • 1/3 of a cup of tapioca starch.
  • 3 tablespoons of sugar.
  • 2 teaspoons of instant yeast.
  • 1 1/4 teaspoons of salt.
  • 1 1/4 teaspoons of xanthan gum.
  • 1 cup of warm milk.
  • 4 tablespoons of softened butter. 
  • 3 large eggs. 

Mix all the dry ingredients. With an electric mixer; mix dry ingredients on 1 speed while you slowly pour in the warm milk. It should be crumbly at first, but it will come together. Add the softened butter and beat on 3 speed for 1 minute. Add each egg one at a time. Mix the mixer on 3 speed until everything is combined. Now continue to mix the batter until fluffy. Cover the bowl with a towel and let rise for 90 minutes. The dough should be puffy. Transfer the batter to a 8 1/2 by 4/12 inch greased loaf pan. Press the dough down lightly so no huge holes are in the bread. Try not to mess with the bread too much because whatever finger prints are on the top of the loaf are gonna be there when it's done baking. Let the dough rise again for 90 minutes. Finally bake for 25 minutes on 350F. As soon as you pull it out of the oven remove the leaf to a cooling rack and let completely cool. Don't cut until room temp. Enjoy!

Roasted Vegetable Soup.

Hello Friends,

Vegetables, you either love'em or you hate'em. I love them if they are prepared right. Eating raw celery ins't something I exactly wanna do, but vegetables are something our body craves because of the minerals that are hard to get otherwise so I was goofing around in the kitchen yesterday and I decided to make something with beets that we had gotten from the Farmers' Market by our house; so they were really fresh! I started cutting them into fries, I started thinking if these would make a good side dish if I roasted them. Well, one thing led to another and next thing I knew I had a delicious soup!

Ingredients: 
  • 2 beets chopped. 
  • 1 cup worth of green beans.
  • 2 small new potatoes, chopped.
  • 1 carrot chopped.
  • A handful of kale leaves.
  • 5 garlic cloves, smashed.
  • Olive Oil. 
  • 3 1/2 cups vegetable broth.
  • 1/2 teaspoon of sea salt. 

Preheat oven for 350F. Arrange the vegetables evenly on a baking tray. Place the smashed garlic even on top of the vegetables and drizzle with olive oil. Let roast for 25-30 minutes take out if the oven and place the vegetables and garlic in a large pot. Saute with oil then add the vegetable broth. Let come to a boil. You have a choice of using a food processor, an Immersion blender or a regular blender as long as you puree it you're fine. Once pureed, pour back into the pot and boil. Add Salt. Serve with a olive oil drizzle and some Parmesan, best hot! Enjoy!

Pasta!

Hello Friends,


Lately it seems like I can never get enough sleep, but I guess I'll keep drinking coffee and getting as much sleep as possible. Today is gonna be a pretty crazy day! Making gluten-free cookies to sell at my gig playing at my gig then the after party! By the way if you're in Austin you're more then welcome to stop by!
At the Ballroom Spider House 6-8 a bunch of bands all under the age of 18 will be performing! It's FREE!!
All ages and there will be vintage clothes, gluten-free cookies and band merch! Fun fun! Now another matter I need to address is that I have been being sloppy of getting the posts out to you in time and I apologize and I will work on getting better! Now lastly I wanted to talk about pasta! Now gluten-free pasta can get expensive and sometimes the pasta is mushy ect ect ect, but by making fresh pasta you aren't gonna get a mushy pasta you're gonna get a chewy soft pasta, yum! So here's today's recipe!


Ingredients:

In a food processor put the flour and xanthan gum. Pulse until mixed. Add the salt and the eggs, and process until combined. You should get a soft dough. Take out the dough and form a dough ball and kneed until fully combined. Roll out into 1/16th of an inch think. Cut into any shape you like! Boil until soft and chewy! Add your favorite sauce or pesto. Serve hot! Enjoy!

Beignets

Soft, chewy and hot beignets are a light fried doughnut normally covered in a mountain of powdered sugar! YUM! Cafe Du Monde (located in New Orleans) is known for their's being the best; before I went gluten-free I had some from Cafe Du Monde and they were defiantly living up to my 13 year old self standards!
Now that I'm gluten-free and a drive to New Orleans is out of the question I decided to make them myself.
So so so good! If you don't make these you're missing out my friend!


Ingredients: 

  • 1 1/4 cup of water.
  • 1/2 cup (1 stick) of salted butter.
  • 1 teaspoon of salt.
  • 1 teaspoon of sugar.
  • 1/2 teaspoon of xanthan gum. 
  • 1 1/2 cups of Sorghum Flour Blend.
  • 4 eggs
  • Powdered sugar for dusting varied amount. 
  • Vegetable oil. 

Fill a pot 4 inches of vegetable oil. Heat the pot until oil is very hot MED HI should do it! While the oil is heating take out another pot, boil the water, butter, salt and sugar. Once the water mixture boils remove from heat and add xanthan gum and the flour all at once; whisk until it's all combined and doesn't stick to the side of the pot. Put the dough into a mixing bowl and mix with an electric mixer until the dough is slightly warm to the touch. Add each egg one at a time and mix with the electric mixer completely before adding each egg. Once the oil is nice and hot, drop about a tablespoon's worth or each beignet into the hot oil  Let the dough ball get a nice golden brown on both sides. Mine turned themselves, but you you can use chopsticks or tongs to flip them. Once all of the beignets are cooked and on a plate cooling; dust with a thin or think layer of powdered sugar whatever your sweet-tooth tells you ;) Serve hot! Goes great with coffee or jam! Enjoy!

Valentine's Day!

Hello Friends,


It's been a long day for me! I'm very tired and ready to hit the hay. But I still found the time to write a post just for you! <3 So Valentine's day is today and I love giving gifts! I think I love giving them more than receiving them! Gifts can be handmade for free or can be pre-ordered for 50,000 dollars. But all in all it's the thought that counts. I think that most people have the same idea about that. I honestly find that handmade gifts the best. Sometimes we don't have the time to make one, but can you spare 30 minutes to make this treat? Peach bars. This is also a recipe for my cousins! I hope you enjoy!


Ingredients: 

  • 1 (12oz) jar of peach preserves.
  • 2 cup of oats.
  • 1/2 cup of maple syrup
  • 1/2 cup of sugar. 
  • 1 teaspoon of cinnamon. 

Start by greasing a 1 1/2 - 2 qt baking dish. Preheat the oven for 350F. In a large bowl mix the oats. sugar, maple syrup and cinnamon. Lay the oat mixture in the dish and bake for 10-15 minutes or until the sugar is melted. Add a thick layer of the peach preserves and bake for additional 5 minutes. Pull out and let cool completely. Cut into even squares and serve! Enjoy!

Creamy Chive and Garlic Pasta.

Last night my mom was asking me to make spaghetti so instead I through together a made-up recipe.
It was so good! Rich, thick and creamy! It was a quick and simple dish defiantly gonna make it again!


Ingredients: 

  • 1 package of GF Spaghetti pasta. 
  • 2 garlic cloves minced.
  • 4 chives chopped. 
  • 3 tablespoons of salted butter. 
  • 2 tablespoons of Sorghum Flour Blend.
  • 1 tablespoon of olive oil.
  • 2 1/2 cups of whole milk. 
  • 1 tablespoon of heavy cream (optional).
  • Salt and pepper to taste. 
  • You can grill chicken or salmon to serve on top, but it's up to you. 

Follow the directions on the Pasta box to cook the pasta. Once the Pasta is halfway done start on the sauce. 
Saute the chives and garlic in a oiled large pan. Add the butter and let it melt. Mix the flour with a whisk until the butter and flour are a paste like texture. Pour in the milk and  whisk until all is smooth. Add the Heavy cream, salt and pepper and cook for 5 minutes or until thick. Serve on top of the pasta and garnish with whatever you like! Enjoy!

Avocado Pesto Pasta

This is a good one for busy weeknights when you have about 15 minutes to get dinner on the table.
It's fresh and healthy not to mention it's really good! I made this for the first time with Dancing Dog, she loved it!


Ingredients:

  • 6 ounces of gluten-free pasta.
  • 1 ripe avocado.
  • The juice of two limes.
  • 1/4 cup minced cilantro. 
  • Salt and pepper to taste.

Follow the directions on the pasta box to cook the pasta and set a side when done. In a food processor process all the remaining ingredients. Pour the avocado mixture from the processor over the warm pasta. Stir in a large bowl. Serve alone or with grilled chicken. Enjoy!

Caramelized Tofu Stir Fry

Hello Friends,


Oh jeez! I'm sorry! I'm a few hours late on this post! I got a little caught up in things and lost track of time. But it's here now and that's all that matters! This is gluten-free/vegan oh, and it's delicious! This is a good dinner if you want someone to eat veggies without them knowing! My mom had no idea she had eaten Brussels sprout until I told her!

Ingredients: 


  • 8 ounces of hard tofu. 
  • A pinch of salt.
  • A splash of olive oil.
  • 2 cloves of garlic minced.
  • 1/3 cup chopped pecans. 
  • 3 tablespoons of brown sugar.
  • 1/4 cup of soy sauce. 
  • 1/2 pound of shredded brussel sprouts. 
 
Saute the tofu in oil. Add the salt, garlic and pecans. Put tofu and pecan mixture on a plate and pour a little oil in the pan again. Throw in the brussel sprouts, brown sugar and soy sauce. Saute the mixture until the brussel sprouts are getting a little golden on the ends. Add the tofu mixture from earlier to the pan of brussel sprouts and heat the mixture throughout. Serve with hot rice enjoy!

Hummus

Hello Friends,



Now, if you love hummus like me you have probably tried locally made Grandma's hummus then you also probably know that it's really good! But it adds up cost wise! So that's why I decided to start making my own hummus. Finally I made a recipe that is if not better then just as good as Grandma's Hummus! Whoo!


Ingredients: 

  • 1/4th of a jalapeno.
  • 4 cloves of garlic.
  • 2 cups drained chickpeas (liquid reserved).
  • 1/3 cup sesame tahini.
  • The juice of two lemons.
  • 1 1/2 teaspoons of salt.
  • 2 tablespoons of the reserved chickpea liquid. 

In a food processor add the jalapeno and garlic and pulse until finely minced. Add the rest of the ingredients and process into a smooth, but grainy texture. Serve fresh with your favorite chips!

Chili

Hello Friends,



Well, since I posted a polenta recipe thinking that you needed it for the pizza I decided to make a recipe that you can have the polenta as a side with. Chili comes in different styles, there's the Texas version that has no beans, just meat and tomato. Then (I will be honest I don't know when/where it was invented) they people started to add beans. So on and so on. So here's just a basic Chili recipe (yes it has beans).



Ingredients: 

  • Vegetable oil for greasing the pot. 
  • 1 pound ground beef. 
  • 1 onion minced. 
  • 2 (12 oz) cans tomato sauce. 
  • 2 (12 oz) cans pinto beans, drained. 
  • 2 (12 oz) cans black beans, drained. 
  • 2 teaspoons cumin. 
  • 1/2 teaspoon salt.
  • 1 teaspoon paprika. 
  • 1-2 teaspoons cayenne pepper (add more or less by how spicy you like it) 
Saute the onion in a greased pot on MED. Add the ground beef and cook until browned. Add the tomato sauce and beans. Simmer for 5 minutes, add the spices and let cook on a low simmer for 20 minutes. If you have some polenta left over slice it up, saute in some olive oil and serve on top of the Chili. Yummy! Enjoy!

Polenta Deep-Dish Pizza

Hello Friends,


Now, I will be honest with you all; some people just really don't know anything about cooking, and there's nothing wrong with that! But then there are people who claim to be the best and don't even know the basics, now these people get under my skin. Now the reason I bring up this is because I had one of those moments recently. I had found the idea for Polenta Pizza on Punchfork.com (LOVE THAT SITE) and I thought "Wow, what a great idea!" so I decided to test it for my blog. I had made fresh Polenta just for the recipe because it called for "3/4 cups of Polenta" so there I am later that night testing the recipe and I put in my fresh polenta into the hot milk. I followed the directions and it did not thicken as the recipe said it would. I read through the first step probably a dozen times to make sure I did it right. NOPE, I did it all perfectly and then it dawned on me after cooking the polenta and milk for an hour with no change in texture, that this award-winning blog's writer had meant "cornmeal" CORNMEAL not Polenta! So I closed my laptop and went through the recipe blind. After a I had finished the pizza my brother came down (already have eaten dinner) tried one bite and ate 5 slices. I think that he liked it and that's coming from a kid who hates tomatoes! Well, I hope you like this recipe as much as my family likes it :)






Ingredients:

  • 3/4 cups whole milk.
  • 1 1/2 cups water.
  • 1 1/2 cups cornmeal yellow or white. 
  • 1/2 teaspoon salt.
  • 1 tablespoon olive oil plus additional oil for greasing the pie pan. 
  • 3/4 cups marinara.
  • 1 1/2 cups mozzarella (fresh chucks or shredded is fine).
  • 2 tablespoons basil pesto. 
  • Pepperoni, (optional). 
Heat the milk and water on HI. Once boiling add the cornmeal, stir in slowly so clumps don't form. Cook on MED until the mixture is very very thick. Add the olive oil and salt. Mix to combine. Take a 8 inch or 9 inch pie pan and spread the milk and cornmeal mixture to form a crust. bake for 20 minutes on 350 F. Take out and cool for 5 minutes. Layer with cheese marinara and top with more cheese and pesto ( you can add the pepperoni or whatever other toppings you want) bake for 25 minutes on 350 F. Let cool for 10 minutes. Cut and serve. YUM! PIZZA!!! Enjoy!

Polenta

Hello Friends,


Happy Tuesday! This is a quick post because I have an hour before I need to catch my bus. Now this recipe may be quick, but the finished product has polenta flavor ;) Okay I should stay away from ever making a joke like that again.... Okay where was I? Oh yeah! So this is a recipe leading up to another recipe so this is just a small step to the actual recipe, but don't get me wrong, polenta can be on it's own, it's great for someone with a vegetarian diet who needs an alternative to meet patties, gluten-free cakes, and well, polenta pizza, yes another pizza recipe will be out soon! Now, I don't know about you, but I LOVE pizza, but it's kinda hard to find at times :/ So, I resort to making it myself. But enough of that! Let's get back to the polenta!



  • 4 cups whole milk.
  • 1 tablespoon butter.
  • 1 cup yellow or white cornmeal. 
  • 1 tablespoon heavy cream.
  • Salt and pepper to taste. 
Bring the milk and butter to a boil. Slowly add the cornmeal while stirring, trying to not make lumps.
Cook for 25-30 minutes the polenta should be the thickness of over cooked oatmeal. Once the polenta is think enough, pour into a baking dish and refrigerate for 1 hour. Take out and cut into desired shapes and saute in olive oil until golden brown and enjoy as a side or whatever you want, maybe pizza? That recipe will be out tomorrow!

Wheat and Gluten Info.

Hello Friends,


This has been a very tiring week for me I have to admit! Lot's of walking and taking of buses, editing of videos, writing posts ect ect ect.  I've been meeting so many people lately it's crazy! I do enjoy my busy schedule, but I have to admit it's becoming a little too much at times. So if there is ever a post of nonsense you'll know why ;)

Since today is just-one-of-those-days I will not be posting a recipe, but an information post about gluten and substitutes for wheat.  

Too be honest fluffy white bread is delicious! I mean every kid goes through the "White Foods Stage" our taste buds dig the stuff! So why is it that we all love bread SO much? Well because one reason it's carbohydrates our bodies NEED them to survive, and we can get them without eating breads and wheat, but it's just a bit harder. Now, wheat is crop that grows in MASS quantities and once I'm sure there wasn't ANY allergies related to wheat, but times change and sure enough Celiac or Gluten Sensitive people came into our everyday lives. Now, as easy as people say it is to be gluten-free, it's not, it's actually quite hard! Gluten-free flours are more expensive than just wheat flour and once again that comes to the fact that we are mass producing wheat, if you pay attention to how much wheat you eat it's INSANE! Let's make up a day of meals (just for example).


So you wake up,  have breakfast and you eat: 2 eggs, 2 slices of toast and a cup of coffee. Okay that's a good breakfast, but then you are having toast! Yes, toast is delicious, but that's 2 gluten points (yes we are keeping score now). Okay and then for lunch let's say you go to a restaurant for your lunch break and you eat: A turkey sub, some potato chips and (let's be healthy) a bottle of water. So now you get 3 more gluten points from the sub alone, so now you are at 5 GP (Gluten points). Now you have a snack and you eat: A granola bar and a couple of crackers.  Crackers means another GP so now you have 6 GP. Now you have dinner, you eat: Pasta with tomato sauce, some salad and a couple slices of garlic bread. Your sum is 15 GP. That's a lot of wheat and carbs! Now once again there is nothing wrong with carbs, but too much is bad, just like everything; too much of salt will taste bad, too much time staring at a computer will hurt your eyes and too much time not sleeping is not good. So you see how too much wheat is bad? So, you can eat wheat, I even do it on occasion (Shhh),but eating it too often and too much is not a good thing. Now if you're Celiac it's another story! Now, why is wheat everywhere? Well because it's cheap it's easy to grow and it grows fast! Even some sausage has wheat as a filler O.o

Thus back to the mass amounts of wheat on the planet. We grow this stuff so much it's coming out of our ears! Okay not really, but you get the picture it's a lot of wheat! The wheat our great grandparents ate was clean and healthier than the wheat today, whys that because GMO OH NO! Yes Genetically Modified Organisms the wheat was once very very good for you because it was a natural grain from the earth, but once GMO came into the picture it's been very very bad for you! Now would you eat milk with GMO in it? Or what about meat or veggies with GMO would you eat them? Nope! What's GMO you ask? Well in the simplest words it's growth hormones, and if consumed on a regular basis food with GMO can effect your growth.....
So all in all eating shouldn't be complicated, but sadly it is for a lot of the people with special diets.

Cinnamon Rolls!

Hello Friends,


Also known as Sweet Rolls this classic is something all gluten-free folk can't live without! I had never really worked with instant dry yeast until recently, so I decided to make as many things as I could using it; somehow in there I came across the idea to make cinnamon rolls! So I give you the gift of foodie heaven. ;)

Cinnamon Rolls

Ingredients: 
Dough
  • 3/4 cup milk (use whole milk).
  • 1/2 cup + 1 tablespoon sugar.
  • 1/2 cup (1 stick) salted butter, cut into pieces.
  • 1 1/2 teaspoons salt.
  • 1/3 cup warm water.
  • 4 1/2 teaspoons (2 packets) active dry yeast. 
  • 3 eggs. 
  • 4 1/2 cups of Sorghum Flour Blend
  • 2 teaspoons xanthan gum.
Ingredients: 
Filling
  • 1/4 cup melted butter. 
  • 3/4 cup sugar.
  • 3 tablespoons ground cinnamon.
Ingredients:
Glaze 
  • 1 cup confectioners' sugar.
  • 3 tablespoons milk. 
To make the dough: Scald the milk in a small pot, remove from the heat and add 1/2 cup of sugar, butter, salt. Cool to lukewarm. Combine the warm water, remaining 1 tablespoon of sugar, and yeast in a medium bowl and let it stand until the mixture is foamy, that means the yeast is alive! Add the lukewarm milk mixture and eggs to the yeast mixture and stir to combine. Add the flour blend and the xanthan gum. Mix well and form the (now dough) dough into a ball. Add more flour blend if you need it to make the dough soft and smooth and only a little tacky. Roll out the dough between to large sheets of plastic wrap. 

To fill the dough: Brush the rolled out dough with with the melted butter and mix the sugar and cinnamon and sprinkle on the dough. Roll up the dough to form a 24 inch long roll. Pinch the long edge to seal. Slice the roll  into 16 equal sections, each about 1 1/2 inches thick. Lay each roll out on a baking sheet, let sit in a warm location for 30 minutes. Once the have risen bake the rolls for 25-30 minutes on 350 F They will be hot and golden! Yum! Let them cool for 15 minutes. To make the glaze: mix the confectioners' sugar and milk. Drizzle the glaze over the warm rolls. Enjoy!

Sweet and Salty Date Balls

Hello Friends,


I will be honest with you my weekend was very busy. I went to Jam Fest, I had to babysit and I had gig at Strange Brew. So I'm very sorry, but I came unprepared :( But, I planned ahead, in case such a problem happened such as this. A delicious snack/dessert and it only takes 3 ingredients and it's gluten-free, vegan, raw and paleo!    



Sweet and Salty Date Balls


Ingredients: 
  • 1 cup of salted cashews. 
  • 2 cups of dates.
  • 3 tablespoons of coconut oil.
In your food processor, grind the cashews into a butter. Add the dates and pulse until combined and smooth.   Add the coconut oil and pulse until mixed. Roll out into balls and place on a plate. Refrigerate for 30 minutes or until the surface isn't oily. Enjoy!

Mochi!

Hello Friends,


What is this? Another post in one day???? Yes it is! We are making Mochi!
Sweet and sticky this Japanese dessert is as fun to make as it is to eat!


  • 2 tablespoons of sugar. 
  • 1/2 cup of Mochiko  (this is a MUST)
  • 1/2 cup of  hot water. 
  • About 1/2 cup of potato starch.
In a small glass bowl dissolve the sugar in the water. Stir in the Mochiko so it's the consistency of heavy cream. Steam the mixture for 15 minutes. No peeking! Remove the bowl careful not to burn your fingers from the steam. With a spatula remove the Mochi from the bowl onto a generous dusting of potato starch. Cover your hands with more potato starch roll out the Mochi and cut into small 1/2 inch cubes. Toss in potato starch. Use it as a topping for ice cream or any dessert of choice! Enjoy!

Chicken Fried Noodles!

It's been a long week for me (not to mention the crazy weather we have been having) and I'm ready for it to be done! Thursday is upon us and what better way to get through the day then Chicken Fried Noodles, this recipe was constructed from a dish I order from my local Chinese restaurant, they call it "Singapore" it's a stir fry with fresh rice noodles and veggies yum! But the taste was so different that I had a hard time making it the same. After many fails I succeeded! So I bring to you from your's truly....

Chicken Fried Noodles


  • 4 bunches of dried Vietnamese rice noodles.
  • 1/2 cup of chopped green onions.
  • 2 stalks of celery chopped.
  • 1/2 cup chopped white onion.
  • 2 carrots chopped.
  • 1 cup of sliced meat or if you are vegetarian use portobello mushroom. 
  • 1 tablespoon of sesame seed oil. 
  • A splash of soy sauce. 
  • 2 eggs. 

Feeds: 4 people as a side dish or 2 for a main course. 

Boil the noodles in water for 7 minutes or until soft and chewy kinda like springy fresh rice. Heat a pan on MED add the sesame oil and soy sauce. Saute the meat/mushroom for 1 minute add the veggies and saute until tender. Add the noodles and saute for 30 seconds. Crack the 2 eggs in a bowl and whisk. Pour the whisked eggs to the cooking stir fry and cook until the egg is solid. Serve hot and fresh!

Vegan Tamales.

Hello Friends,


Today's recipe is a Mexican classic with a twist; vegan tamales! I have always loved tamales, but sometimes it's hard to find them. When I lived in Florida a Mexican bakery would supply my craving every Friday (if you came in before 12:00). Austin, TX doesn't have a Mexican bakery I have found yet, so my tamale craving went on a craving, until I went to the Trail of Lights last year with some friends another foodie friend of mine (Dancing Dog) saw a food vendor selling tamales (tamale nirvana) I was so happy I had missed them so much! Warm and soft full of silky chicken (they were out of pork) I ate my tamales happily! Now I'm tired of waiting for such events just for some tamales! I'm making my own darn it! So last night I made some (SO GOOD) and here I am sharing my tamale recipe with you all!



  • 30 dried corn husks.
  • 1 3/4 cups of vegetable oil.
  • 3 cups tamale flour.
  • 2 cups of lukewarm water.
  • 1 teaspoon of salt. 
  • 5 cups of button mushrooms chopped.
  • 2 teaspoons cumin. 
  • 1 teaspoon paprika.
  • 1 1/2 teaspoons garlic powder. 
  • 1 teaspoon salt. 

Soak the dried husks in cold water for 30 minutes. Beat the oil for 7-10 minutes. In another bowl mix tamale flour, water and salt. Add the tamale flour dough too the oil and beat for 5 minutes, set aside the tamale batter while you prepare the filling. Saute the chopped button mushrooms in a tablespoon of vegetable oil. Add the cumin, paprika, garlic powder and salt and saute until hot and cooked. Remove the husks from the water and fill each one with about 1/3 of a cup of the tamale batter, add some of the mushroom and close up and tie with cooking yarn the uncooked tamale. Pack all the uncooked tamales in a large steamer and place more dried husks, a plastic shopping bag and a dry cloth on top. Lid the steamer and steam for 45-50 minutes. Remove from steamer and plate, enjoy with fresh salsa or any sauce you like. Tamales + Moi = a happy girl ;)

Fruit Tart

Hello Friends,

I've been such a good blog hostess this week I have to admit! 3 whole recipes what? That's un-heard of,  anyway enough praise for me. I'm bringing to you something magical, something so amazing you might even dance a little. I bring you a gluten-free fruit tart!!!! Whoo hooo! Happy day! 

Fruit Tart 




Tart Crust: 

  • 3 tablespoons of salted butter. 
  • 1/4 cup + 1 tablespoon of confectioners' sugar. 
  • 2 egg yolks.
  • 1 egg
  • 1/2 sorghum flour blend
  • 1/2 teaspoon xanthan gum. 
Cream the butter and sugar together. Add the egg yolks and egg, beat together until combined. In a separate bowl whisk the flour and xanthan gum together. Mix the egg mixture and flour mixture together. The dough should be like firm cookie dough. Wrap in plastic wrap and chill for 30 minutes in the refrigerator. Roll out dough 1/4 inch think and lay it in the tart pan cut off extra dough on sides, but leave about 3 inches around the edges because the dough will shrink. Place a large piece of parchment paper on the dough in the pan and fill with baking weights or dried beans or rice. bake for 15 minutes on 350F, remove parchment paper and weights and bake for an additional 5 minutes. Let cool for 10 minutes before removing from pan and then setting aside for cream and fruit.

Pastry Cream: 

  • 1/4 cups + 2 tablespoons sugar.
  • 3 tablespoons cornstarch. 
  • 3 egg yolks. 
  • 1 1/2 cups whole milk (no 1%).
  • 1 tablespoon salted butter. 
  • 1 1/2 teaspoons vanilla extract. 
  • 1/2 cup heavy cream.
Whisk the sugar and cornstarch together. Add the egg yolks and set aside. Heat the milk in a small pot until in boils. Temper the egg mixture and the milk by adding a little bit of milk to the egg mixture while you still whisk continue to do this until most of the milk is in the egg mixture. Add all the egg and milk mixture into the pot and heat until it starts to thicken. Add the butter and vanilla and whisk until combined. Wrap plastic wrap on top and put the plastic wrap on top of the custard so a skin doesn't form. Chill for 30 minutes. Whip the heavy cream into whipped cream and add the custard and continue to whip. Fill the tart shell with the pastry cream. Take desired fruit such as strawberries, kiwi or oranges and slice thin, arrange fruit in any way you like. Chill the tart for 2 hours so it can set. Enjoy!

Gluten-Free Flour Blend: Savory Basics

Hello Friends,

This gluten-free flour blend is great for crusts, thickeners, breads ect.


  • 1 1/4 cups brown rice flour. 
  • 3/4 cups sorghum flour. 
  • 2/3 cups cornstarch. 
  • 1/4 cups potato starch.
  • 1 tablespoon + teaspoon potato flour.
  • 1 teaspoon xanthan gum.
Mix together and store in a air tight canister or Tupperware keeps fresh for up to 6 months. 
Brown rice flour is about 3 dollars I think you can buy it at most grocery stores. Sorghum is a little more exotic most health food stores will have it for about 3-4 dollars. Cornstarch is super cheap 99 cents at any grocery store. Potato flour (flour and starch are different) health food stores should carry it 3 dollars. Xanthan gum is about 10 dollars at any health food store I buy mine in bulk at Central Market for about 1 dollar.

Let them eat cake!

Hello Friends,

I was trying to think of what to start this post with, and nothing seemed quite right except this.
Cake........


Mocha Cake with Chocolate Buttercream Frosting
  • 2 cups of sugar.
  • 1 3/4 cups of my rice flour blend
  • 3/4 cup of cocoa powder.
  • 1 teaspoons of baking powder.
  • 2 teaspoons of baking soda.
  • 1 teaspoon of salt.
  • 2 eggs.
  • 1 cup of plain yogurt
  • 1 cup of espresso
  • 1/2 cup of vegetable oil.
  • 3 teaspoons of vanilla.
Heat oven to 350F. Grease and line two 9inch cake pans with parchment paper. Mix all the dry ingredients in a large bowl. Add all the rest of the ingredients and mix until smooth; batter will be very runny. Pour batter evenly into each pan and bake for 30-35. Let cool for 10 minutes. Remove from the pans and set aside while you make the frosting.

Frosting: 
  •  1 cup (2 sticks) of butter.
  • 3 1/2 cups of confectioners' sugar.
  • 1/2 cocoa powder.
  • 1/2 teaspoon of salt 
  • 2 teaspoons of vanilla.
  • 4 tablespoons of heavy cream or milk.
Whip the butter until creamy in a bowl with an electric mixer. Sift in the sugar and cocoa. Whip until combined. Add the rest of the ingredients and whip until smooth and creamy. Frost the cake to your liking and enjoy!

Happy New Year!

Hello Friends,

It's been a very long week for myself and probably for you also. I got terribly sick and didn't feel like doing anything but sleep, so I did. It's 2013 and that's great, but in a way I know I will always miss 2012, a year when I met people I love and always will, I made myself learn 3 instruments, I got on a stage and sang and of course I made this blog, so much more has happened, but that would take too long to name everything. Goodbye 2012 and hello 2013 and all the surprises you have in store for me. What better way to start off the new year, but nun other then healthy crust-less quiche yum! 

Crust-less Quiche 

  • 1/2 cup + 1 tablespoon of Garbanzo Bean flour. 
  • 1 tsp of salt.
  • 1 tsp baking powder.
  • 2 eggs.
  • 1 cup of whole milk
  • 1 stick of butter.
  • 2 shallots.
  • 1/2 cup of locks.
  • 1 cup of cheese.


Preheat the oven to 350F. Mince the shallots and set aside. Mix the flour, salt and baking powder. Melt the butter in the microwave or a saucepan (DO NOT BURN). Add the melted butter in the flour mixture and mix into a paste, add the milk and eggs and stir until smooth. Season to taste with salt and pepper. Mix in the cheese, locks and shallots. Pour the batter into a baking dish; bake for 30 minutes or until golden brown. Enjoy!
