My head was in the clouds.

Hello Friends,

So I'm turning 16 soon and Collage is very soon for me, so I started to go through the ideas of what I wanted to be. For most of my life I wanted to be a Vet, but sadly I'm very squeamish so I had to give that up. For a while I wanted to be an Architect, Cosmetologist, or Studio Artist. Sadly doing those things made me happy, but something was always missing. I always found myself happiest when I cooked/baked so one day it hit me, and I decided to become a Chef. But many things happened, and I couldn't follow my passion. This blog will still be up, and I'll still post recipes and cook, but I'm going off to Engineering school. This blog has been very fun to write on and I hope that I can have the time to still write on it for years to come! Oh! But of course! The main reason I was bringing this all up was because, I'm getting a puppy tomorrow, and because of that, I've been very busy. So I apologize, for this post being late!
This is a great dinner dish! My family loved it!


Ingredients:

  • 4 tablespoons of olive oil (try to get the good stuff with pulp on the bottom).
  • 2 1 inch thick strip steaks. 
  • 1 can of chickpeas (drained).
  • 4 medium tomatoes. 
  • 1 sprig of fresh cilantro. 
  • 3 tablespoons of fresh lemon juice. 
  • 1 cup of crumbled feta. 
  • Salt and pepper to taste. 

Heat a large pan on MED-HI with 2 tablespoons of olive oil. Salt and pepper the steaks and set aside. Once the pan is nice and hot lay both pieces of  the strip steak in the pan. Cook on each side for 5-7 minutes for perfect medium-rare steaks. Once you've cooked the steak, take it out of the pan and set on a cutting board for 5 minutes before slicing. In the mean time slice the tomatoes and chop the cilantro, toss together with the chickpeas in a large bowl. Add the remaining oil in the pan used to cook the meat. Place the veggies in the pan and let them become soft and hot 7-10 minutes. Add the lemon juice to the veggies then salt and pepper to taste. Slice the steak into 1/4 inch slices and serve along side the veggies. Top the veggies with feta. Enjoy! By the way I made this recipe when I have very limited time so it's great for a busy weeknight!
