Oh, how I'm embarrassed, this post is late! I was so frazzled yesterday! So I apologize, and give you a delicious recipe! This recipe is easy for a busy weeknight! So here you go!
Ingredients:
- 1 medium onion (sliced).
- 1 large lemon (sliced).
- 5 cloves of garlic (smashed).
- 3 springs of rosemary.
- Olive oil.
- 10 new potatoes (halved).
- 3 skinless and boneless chicken breasts (washed and dried).
Start by preheating the oven for 425F. In a baking dish line the slices of onion and lemon in a pattern. Lay the rosemary and garlic on top. In a large bowl put the halved potatoes in and toss with some olive oil, set aside. Take your washed chicken breast and cover in olive oil. Arrange the chicken in the baking dish atop of the lemon, onion, garlic & rosemary. Place the potatoes in the baking dish also. Sprinkle with salt and pepper. Bake for 35-45 minutes or until the chicken is fully cooked (165 degrees). Serve the chicken with the potatoes, so gooooooood! Enjoy!
