Vegetables, you either love'em or you hate'em. I love them if they are prepared right. Eating raw celery ins't something I exactly wanna do, but vegetables are something our body craves because of the minerals that are hard to get otherwise so I was goofing around in the kitchen yesterday and I decided to make something with beets that we had gotten from the Farmers' Market by our house; so they were really fresh! I started cutting them into fries, I started thinking if these would make a good side dish if I roasted them. Well, one thing led to another and next thing I knew I had a delicious soup!
Ingredients:
- 2 beets chopped.
- 1 cup worth of green beans.
- 2 small new potatoes, chopped.
- 1 carrot chopped.
- A handful of kale leaves.
- 5 garlic cloves, smashed.
- Olive Oil.
- 3 1/2 cups vegetable broth.
- 1/2 teaspoon of sea salt.
Preheat oven for 350F. Arrange the vegetables evenly on a baking tray. Place the smashed garlic even on top of the vegetables and drizzle with olive oil. Let roast for 25-30 minutes take out if the oven and place the vegetables and garlic in a large pot. Saute with oil then add the vegetable broth. Let come to a boil. You have a choice of using a food processor, an Immersion blender or a regular blender as long as you puree it you're fine. Once pureed, pour back into the pot and boil. Add Salt. Serve with a olive oil drizzle and some Parmesan, best hot! Enjoy!
