Beignets

Soft, chewy and hot beignets are a light fried doughnut normally covered in a mountain of powdered sugar! YUM! Cafe Du Monde (located in New Orleans) is known for their's being the best; before I went gluten-free I had some from Cafe Du Monde and they were defiantly living up to my 13 year old self standards!
Now that I'm gluten-free and a drive to New Orleans is out of the question I decided to make them myself.
So so so good! If you don't make these you're missing out my friend!


Ingredients: 

  • 1 1/4 cup of water.
  • 1/2 cup (1 stick) of salted butter.
  • 1 teaspoon of salt.
  • 1 teaspoon of sugar.
  • 1/2 teaspoon of xanthan gum. 
  • 1 1/2 cups of Sorghum Flour Blend.
  • 4 eggs
  • Powdered sugar for dusting varied amount. 
  • Vegetable oil. 

Fill a pot 4 inches of vegetable oil. Heat the pot until oil is very hot MED HI should do it! While the oil is heating take out another pot, boil the water, butter, salt and sugar. Once the water mixture boils remove from heat and add xanthan gum and the flour all at once; whisk until it's all combined and doesn't stick to the side of the pot. Put the dough into a mixing bowl and mix with an electric mixer until the dough is slightly warm to the touch. Add each egg one at a time and mix with the electric mixer completely before adding each egg. Once the oil is nice and hot, drop about a tablespoon's worth or each beignet into the hot oil  Let the dough ball get a nice golden brown on both sides. Mine turned themselves, but you you can use chopsticks or tongs to flip them. Once all of the beignets are cooked and on a plate cooling; dust with a thin or think layer of powdered sugar whatever your sweet-tooth tells you ;) Serve hot! Goes great with coffee or jam! Enjoy!
