Tisk Tisk On Me....

Hello Friends,

So, I have been late on posts lately, and it's not right for me to promise a post, and it not be there. So I will say now that I'm very busy right now, and posts will be late for a little while, but not more than a day late.
Right now I'm trying to get a job so I can buy a car, then I will have more time from not riding the bus, and having it take an hour for a normally 15 minute drive! So you're tired, you come home, you don't want to cook, but you're super hungry, and you have to eat something that will hold you over for a few hours.  I have the perfect recipe for that! Strawberry Lassi!


Ingredients:

  • 1 lb of strawberries (hulled). 
  • 2 tablespoons of honey. 
  • 1 cup of plain greek yogurt. 
  • 2 tablespoons of milk. 
Blend everything in a blender until smooth. Serve on ice. Enjoy!

The Best Guacamole.

Hello Friends,

So Summer is approaching! Now for you that might mean camping, traveling or just nice days with friends, and something that is always perfect is picnics! So here's a classic picnic food that you'll love!


Ingredients:

  • 2 ripe avocados. 
  • 1/2 a large ripe tomato (minced). 
  • 1/2 - 1 whole jalapeno (minced).
  • 1 clove of garlic (minced).
  • 1 lime. 

Slice both the avocados and remove the pit from both. Remove the skin from the avocado and mash until it's all creamy. Add in the tomato,jalapeno and garlic and mix well. Slice the lime and squeeze fresh lime juice in and mix well. Serve with your favorite corn chips! Enjoy!

The Best Ginger Cookies!

Hello Friends,

Once again, I'm so busy I didn't have time to write a post :( But I'm making it up to you! These cookies are soooooo good!


Ingredients:
  • 2 1/2 cups of Brown Rice Flour Blend.
  • 2 teaspoons of baking soda.
  • 1/2 teaspoon of salt. 
  • 1 1/2 sticks of butter. 
  • 2 tablespoons of ground ginger. 
  • 1 teaspoon of ground cinnamon. 
  • 1/4 teaspoon of ground cloves. 
  • 1/4 teaspoon of pepper. 
  • pinch of cayenne pepper. 
  • 1 1/4 cups of packed dark brown sugar. 
  • 1/4 cup of molasses. 
  • 2 tablespoons of freshly grated ginger.
  • 2 eggs. 
  • 1/2 cup of granulated sugar. 
  • 1 cup of plain potato chips. 

Cream the butter and sugars in a large mixing bowl. In another bowl mix together the baking soda, flour blend, salt, ground ginger, ground cinnamon, ground cloves, both the pepper and cayenne pepper and whisk to combine. Add the molasses. grated ginger and eggs to the sugar and butter mixture and beat with an electric mixer until combined. Slowly add the flour mixture while beating with an electric mixer into the wet ingredients. You will probably have to switch to hands to mix the dough better. Once you have a dough ball, make a little volcano like shape and pour the potato chips in in and began to fold the potato chips in the dough. Don't over fold and crush all the potato chips, you still want big pieces. Preheat the oven for 350F
on a parchment paper lined cookie sheet line up little dough balls on the tray and bake for 15-20 minutes.
Repeat baking process until all the dough is gone. Serve warm! Enjoy!

I give you permission to hate me!

Hello Friends,

Once again I've been going through some stuff. I'm very sorry this post is so darn late!
Peanut Butter and Chocolate Popsicle!


Ingredients:

  • 8 oz of cream cheese softened. 
  • 1 cup of creamy peanut butter. 
  • 1/2 cup of powdered sugar. 
  • 1/2 teaspoon of vanilla. 
  • 3/4 cups of heavy cream. 
  • 4 oz of chocolate chips. 

In a large bowl beat all the Ingredients, except the chocolate chips. Take small paper cups and pour 3/4 of the way full and freeze for 10 minutes. after 10 minutes take out the filled cups and place a Popsicle stick half way in the cup and freeze over night. Once they have hardened completely. Melt the chocolate in a microwave for 10 seconds and stir, repeat until completely melted. Remove each Popsicle from each cup. Dip each Popsicle in the chocolate and place in the freezer until the chocolate sets! And there you have it! Enjoy on a hot day!

Fancy Grilled Cheeses.

Hello Friends,

Tuesday's post this week is a little early because I'm going to be so busy, that I won't have time for even writing it! So today's is a couple different recipes actually! I thought some good lunch ideas would be fun!



Pear and Swiss Grilled Cheese:

  • 1 ripe pear. 
  • 2 slices Swiss cheese. 
  • 1/4 cup of potato chips. 
  • 2 slices of your favorite GF bread. 
  • a little butter. 

In a small pan heat to medium heat. Melt the butter. Slice the pear thinly and layer in on the bread with the cheese and potato chips. Brown both sides of the sandwich. Done, enjoy hot and gooey!
Next Sandwich:

Avocado and Queso Fresco:

  • 1/2 of an avocado. 
  • 1/4 cup of Queso Fresco. 
  • 2 tablespoons of salsa.
  • a little butter. 
  • 2 slices of your favorite GF bread.
In a small pan heat to medium heat. Melt the butter. Slice the avocado think and layer it between the two slices of bread with the Queso Fresco and salsa. Brown on both sides and serve hot! 
Last but not least:

Grilled Margarita: 
  • 1 large tomato. 
  • 3 slices of fresh mozzarella. 
  • 1 tablespoon of olive oil.
  • 2 slices of your favorite GF bread. 
  • salt and pepper to taste.
Heat a small pan on medium and drizzle olive oil in it. Slice the tomato and assemble the sandwich by layering the sliced tomato and mozzarella. Salt and pepper to taste. Stuffed Peppers.

Hello Friends,

I wanted to start out this post saying "thank you". This blog has become so much bigger than I could have ever hoped for! It's a huge honor to know that I'm helping someones' day become a little bit easier. Love all you guys! <3 So here's today's recipe: stuffed peppers!


Ingredients:

  • 1/4 pound of ground beef. 
  • 1 cup of cooked white rice. 
  • 1/2 cup of corn. 
  • 1 small minced onion. 
  • 4 bell peppers. 
  • 1 cup of your favorite pasta sauce. 
  • 2 cloves of garlic minced.
  • 1/3 cup of red wine (optional). 

Heat a large pan on medium heat greased with a little oil. Preheat the oven for 350F. Saute the minced onion and garlic, until tender and slightly yellow. Add the ground beef and saute until it's no longer pink. Add the pre-cooked white rice, corn, wine and pasta sauce. Simmer until most of the liquid is cooked off. Cup the top off each bell pepper like a lid, and set aside. Take out all the seeds in the pepper and fill with the filling. Place the "lid" back on and bake in a baking dish for 15-20 minutes. Serve hot! Enjoy!

Crepes!

Hello Friends,

I've been going through some crazy stuff lately, so I'm very sorry that I didn't post this yesterday like I should have! I had planned to post this recipe about a month ago, but when I made it for the first time I grabbed a random flour blend I had in the pantry and used it. Sadly the flour blend wasn't labeled so I didn't know what flour it was. So I re made it this time knowing what flours I used! So here it is!


Ingredients:

  • 1 1/3 cups of whole milk. 
  • 4 eggs. 
  • 2 tablespoons of oil.
  • 1 cup of mochiko aka sweet rice flour. 
  • 1/2 teaspoon of salt. 

Mix everything in a bowl until smooth. heat a medium sized pan on medium heat and grease with a little oil. 
Once the pan is nice and hot, pour about 1/4 cup of the batter and swirl it around so it coats the bottom of the pan evenly. Cool for 2 minutes then flip and cook for another minute. You can serve it with strawberries and whipped cream. I like mine with a little honey and butter. Enjoy!
