Quinoa Stuffed Zucchini!

Hello Friends,

Forgive me, this post is late! I'm going through a break up and it's really rough. Today has been interesting I've been so tired all day long, but things get better and change is good! So this recipe is a little different, but it's very delicious!


Ingredients:

  • 2 large zucchinis. 
  • 1/2 cup of dried quinoa.
  • 1 cup of chicken broth.
  • 1 can of white kidney beans. 
  • 1 cup of halved cherry tomatoes. 
  • 1/2 teaspoon of garlic powder. 
  • 1/2 cup of chopped almonds.
  • 3/4 cups of grated Parmesan.

Preheat oven to 400 F. Cook the quinoa in the chicken broth until the almost all the water has evaporated and then pull off the burner and let set for 5 minutes then fluff. In a large bowl, mix the cooked quinoa, white kidney beans, cherry tomatoes, garlic powder, chopped almonds and 1/2 cup of the Parmesan  Wash the zucchini and cut in half length wise, scoop out the seeds and fill with the quinoa mixture. Sprinkle the rest of the parmesan on top and bake in a baking dish covered in foil for 20 minutes. Remove foil and bake for another 8 minutes. Serve hot and fresh! Enjoy!

Pocket Sloppy Joes

Hello Friends,

Even though I'm tired enough to fall asleep at the cafe I at now, I'm still going to write this blog post!
I probably made about 4 new episodes of my gaming series today without making sure I was getting ready on time; whoops! But here I am :D Everyone in my family wanted 100 of these pockets! They are perfect for a young child or a lunch box!


Ingredients: 
  • 1 white onion (minced). 
  • 1 pound of ground beef.
  • 1 teaspoon of salt. 
  • 1/2 teaspoon of ground black pepper. 
  • 1 teaspoon of cayenne pepper. 
  • 1/2 teaspoon of mustard powder.
  • 2 tablespoons of Worcestershire sauce. 
  • 2 tablespoons of brown sugar. 
  • 1 small can of tomato paste. 
  • 1 package of Chebe Original Cheese Bread Mix. 
  • 1 cup of shredded cheese.
  • 2 tablespoons of oil.
  • 3 large eggs.
  • 1/4 cup of water.

Preheat oven for 375 F. In a large pan saute the minced onions in a little bit of oil. Add the ground beef and saute until the beef is no longer pink. Add the salt, black pepper, cayenne pepper, mustard powder, Worcestershire sauce, brown sugar and tomato paste. Simmer the seasoned beef for 5 minutes. In the mean time make the Chebe Original Cheese Bread Mix according to box using the 2 tablespoons of oil, 2 eggs and 1/4 cup of water. The third egg is for an egg wash at the end. Kneed the cheese bread dough until it's no longer sticky. Break the dough into 8 balls. Roll out each circle between 2 pieces of plastic wrap. Place 1/8 of the sloppy joe meat on each circle and close up each one; making a half moon shape. Place on baking sheet lined with parchment paper. Beat the remaining egg and brush each raw pocket with the egg wash. Bake for 20-25 minutes. Let cool for 5 minutes before eating. Enjoy!

Easy Chicken Dinner.

Hello Friends,

So last night was okay, I got a new dog and had to make sure it didn't have an accident. So I had to let it out in the middle of the night several times. Yay no sleep! -_- But the dog is worth it! She's super cute, and tries to make me laugh. But back to business, this dish was very quick and delicious! I recommend it if to anyone that has picky family members!


Ingredients:

  • 2 large boneless skinless chicken breasts (cubed).
  • 1 teaspoon of cumin. 
  • 1/4 teaspoon of cayenne pepper.
  • 2 cans of black beans (drained).
  • 1 sprig of cilantro (chopped).
  • 1 cup of corn. 
  • 1/2 cup of cherry tomatoes (halved).
  • Half a red onion (minced).
  • Salt and pepper to taste.

Mix the cumin and cayenne pepper in a small bowl and toss it in the cubed chicken breasts. Heat a large pan with a but of oil on medium heat. Once the pan is hot toss in the chicken breast and cook until golden on each side of cubes. Take the cooked chicken out of the pan and set it on a plate for later. In the same pan saute the red onion until soft. Add the black beans, tomatoes, cilantro and corn. Saute all until bubbly and hot! Serve the bean mixture in a bowl with some chicken on top! Salt and pepper to taste. Enjoy!

My head was in the clouds.

Hello Friends,

So I'm turning 16 soon and Collage is very soon for me, so I started to go through the ideas of what I wanted to be. For most of my life I wanted to be a Vet, but sadly I'm very squeamish so I had to give that up. For a while I wanted to be an Architect, Cosmetologist, or Studio Artist. Sadly doing those things made me happy, but something was always missing. I always found myself happiest when I cooked/baked so one day it hit me, and I decided to become a Chef. But many things happened, and I couldn't follow my passion. This blog will still be up, and I'll still post recipes and cook, but I'm going off to Engineering school. This blog has been very fun to write on and I hope that I can have the time to still write on it for years to come! Oh! But of course! The main reason I was bringing this all up was because, I'm getting a puppy tomorrow, and because of that, I've been very busy. So I apologize, for this post being late!
This is a great dinner dish! My family loved it!


Ingredients:

  • 4 tablespoons of olive oil (try to get the good stuff with pulp on the bottom).
  • 2 1 inch thick strip steaks. 
  • 1 can of chickpeas (drained).
  • 4 medium tomatoes. 
  • 1 sprig of fresh cilantro. 
  • 3 tablespoons of fresh lemon juice. 
  • 1 cup of crumbled feta. 
  • Salt and pepper to taste. 

Heat a large pan on MED-HI with 2 tablespoons of olive oil. Salt and pepper the steaks and set aside. Once the pan is nice and hot lay both pieces of  the strip steak in the pan. Cook on each side for 5-7 minutes for perfect medium-rare steaks. Once you've cooked the steak, take it out of the pan and set on a cutting board for 5 minutes before slicing. In the mean time slice the tomatoes and chop the cilantro, toss together with the chickpeas in a large bowl. Add the remaining oil in the pan used to cook the meat. Place the veggies in the pan and let them become soft and hot 7-10 minutes. Add the lemon juice to the veggies then salt and pepper to taste. Slice the steak into 1/4 inch slices and serve along side the veggies. Top the veggies with feta. Enjoy! By the way I made this recipe when I have very limited time so it's great for a busy weeknight!

French Macaroons.

Hello Friends,

Now things go wrong, and when they do you often feel confused or worried. In my case the last couple of days have been very rough :( But that's no reason you can't be happy! Enjoy some of these really delicate cookies! Perfect for a cool April day! 


Ingredients:
  • 2 1/2 teaspoons of granulated sugar. 
  • 1 cup of powdered sugar. 
  • 3/4 cups of almond meal/flour. 
  • 2 large egg whites room temp. 

Start by mixing the almond flour and powdered sugar together. Take the mixture and thoroughly sift twice (THIS STEP IS A MUST) There might be a little pile of larger pieces of almonds in the sifter coated in powdered sugar, I recommend to snack on this as you work; it's so numy! Set aside the sifted almonds and powdered sugar. In a large mixing bowl beat the egg whites to a foamy consistency add the granulated sugar and beat until you have stiff peaks. Note: this recipe is for plain macaroon shells if you want them a certain color or flavor add it in when you add the sugar to the egg whites when the egg whites are foamy.

 Once you have your stiff egg whites fold the egg whites in the almond and powdered sugar mixture. This step is very important because if you stir it too long the mixture gets too soupy and you won't get the perfect macaroon! If you don't stir enough the shells will crack :( So here's what you want to do. Fold the mixture until when you lift up your spatula it take 30 seconds for the mixture to drip back into the bowl and 60 seconds to become a smooth mixture again. This is when the batter in perfect! You're gonna want to take a parchment lines baking sheet. Put half the batter in a piping bag and pipe dollar coin sized circles on the parchment. Now I know this might be hard for you, but take the sheet with the batter on it and bang it to make sure all the air bubbles are out of the circles.  Let them stand on the sheet before baking for 15-20 minutes.

 Once you have let them sit, bake at 300 for 15 minutes. Let cool for 2-3 minutes! They should have those cute little feet on them. Like shown in the picture. You can fill them with a custard, pastry cream or nutella like me! Enjoy!

Super Easy Gooey Chocolate Cake!

Hello Friends,

As you all know by now I'm a 15 year old girl that lives in a Hippie Town. Now, my town (Austin, TX) is also known as the live music capital of the world. It's also known for it's good food! Austin food is very different, it's commonly from the minds of a collage grad from UT, wanting something cheap, easy and good! I find myself eating as restaurants with food with only a few ingredients, and I tell you it's some of the best food I've ever had! So this is why I've come to the conclusion that, why not make these easy foods at home how you like and gluten-free? So this is what I bring you! Super Easy Gooey Chocolate Cake!


Ingredients:

  • 4 large eggs.
  • 1 cup plus 1 tablespoon of nutella or other chocolate hazelnut spread. 
  • 2 cups of milk chocolate chips.
  • 1 tablespoon of heavy cream (or coconut oil). 
  • Powdered sugar for plating. 

Preheat oven for 350 F. Crack all 4 eggs and whip until you have soft peaks. In another small bowl put the nutella in and heat in the microwave for 20 seconds or stove top for 30 seconds just until the nutella is super gooey! But not too hot that it will cook the egg. Take your gooey nutella and fold in 1/3 of the whipped eggs until you have a mixture that is smooth in color. Repeat with the other 2/3 of the eggs. You will be left with a fluffy mocha colored batter. With a spring form pan lined with greased parchment paper, pour the mixture slowly in the pan. Bake for 20- 25 minutes. In the mean time melt you chocolate chips and add your heavy cream. Stir until smooth. Once the cake in done pour the chocolate and heavy cream mixture on top and refrigerate until it hardens 1-2 hours depending on how cold your freezer is. Sprinkle powdered sugar before plating. Super gooey and delicious! Enjoy!

Smoothie.

Hello Friends,

So there's a local smoothie chain in my town called JuiceLand and my mom has a regular craving for one of their drinks called The Moontower. My mom got tired of spending 7 dollars a day for a drink she could create at home for less. Me and her worked together to get the taste right and Tadaaaa!

Ingredients:

  • 1 frozen banana (sliced). 
  • 1/4 cup of rice milk.
  • 2 tablespoons of peanut butter.
  • 1 teaspoon of rice protein powder. 
  • 1/2 teaspoon of cacao powder. 
  • 3 whole dates. 

In a blender, blend the banana and rice milk until smooth, add the peanut butter, protein powder and cacao and blend until there are no lumps. Add the dates and pulse until the dates are chopped. Serve right away! 
If the mixture is a little too think add a little more rice milk until it's how you like it. Enjoy!

French Apple Tart.

Hello Friends,

Yes, you have every right to be mad. I was very busy yesterday and I wasn't feeling very well. So I apologize! So a tart is a lot different than a pie, a tart is thin, delicate, and semi sweet; and a pie is thick, commonly has just about any flavor and is normally very sweet! I prefer a tart because of the filling is always fruit, and I can always rely on that. This tart is perfect for the weather Austin has been having lately; cool rainy and grey this tart is the perfect thing to cheer things up!


Ingredients:

  • The rest of the dough used in the Fruit tart recipe. 
  • 4 apples. 
  • 1/4 + 2 tablespoons of sugar. 
  • 1/2 teaspoon of cinnamon. 
  • 2 tablespoons of grape juice. 
  • 1/2 cup of water. 
  • 1/8 of a teaspoon of salt.
  • 2 tablespoons of butter. 

In a tart pan roll out the dough and bake as said in the Fruit Tart recipe (link above). In a small pot bring the  grape juice and water to a boil. Skin and cube 2 of the apples and add it to the pot and lower the heat to a simmer. Add the cinnamon, 1/4 cup of sugar, salt and butter to the pot and let it cook in low heat until the apples are soft. Mash the mixture and let sit to thicken. Once the tart shell is done put the mashed apple mixture on the bottom and spread it evenly. Thinly slice the other 2 apples and lay the slices as the provided picture shows. Sprinkle tart with the remaining sugar and bake at 300 until the apples are soft on top, about 15-20 minutes, but don't let the tart shell burn. Let the tart cool to room temperature. Serve with fresh cream  or by it's self. Enjoy!
