Reading the title you can already tell this was a request; from a follower named Gabriel. Well Gabriel, you have come to the right place for a stir-fry recipe. I love stir-fry, it's the perfect healthy meal for a busy night!
Now there are different kinds of stir-fry, based on what kind of flavor you like the most common would be a Japanese stir-fry. There's also Vietnamese and Chinese style stir-fry, but Japanese is a good place to start.
Ingredients:
- 2 whole skinless boneless chicken breasts (cubed).
- 2 cups of fresh spinach.
- 1/2 cup of broccoli (chopped).
- 1 bell pepper (sliced).
- Green onion (chopped into 1/2 inch pieces).
- 2 cups of cooked white rice.
- 1 tablespoon of cornstarch.
- 1 tablespoon of soy sauce.
- 1 tablespoon of Mirin (optional, just replace it with water).
- 1/4 cup of chicken broth.
- 1 teaspoon of sugar.
- 2 teaspoons of sesame oil.
In a wok or large skillet stir-fry the chicken until white on both sides. Add the spinach, broccoli, bell pepper, and green onion and stir-fry on MED heat until the veggies are cooked and the spinach has wilted. Mix the cornstarch, soy sauce, mirin, chicken broth, sugar and sesame oil in a small bowl until the sugar dissolves. Add the mixture to the veggies and stir-fry again. The sauce will quickly thicken. Once the sauce is thick and it's all really hot serve it in a bed of rice. Enjoy! Also you can add different veggies if you like.
