Request: Chicken Stir-Fry

Hello Friends,

Reading the title you can already tell this was a request; from a follower named Gabriel. Well Gabriel, you have come to the right place for a stir-fry recipe. I love stir-fry, it's the perfect healthy meal for a busy night!
Now there are different kinds of stir-fry, based on what kind of flavor you like the most common would be a Japanese stir-fry. There's also Vietnamese and Chinese style stir-fry, but Japanese is a good place to start.


Ingredients:

  • 2 whole skinless boneless chicken breasts (cubed).
  • 2 cups of fresh spinach.
  • 1/2 cup of broccoli (chopped).
  • 1 bell pepper (sliced).
  • Green onion (chopped into 1/2 inch pieces).
  • 2 cups of cooked white rice.
  • 1 tablespoon of cornstarch.
  • 1 tablespoon of soy sauce.
  • 1 tablespoon of Mirin (optional, just replace it with water).
  • 1/4 cup of chicken broth.
  • 1 teaspoon of sugar.
  • 2 teaspoons of sesame oil.

In a wok or large skillet stir-fry the chicken until white on both sides. Add the spinach, broccoli, bell pepper, and green onion and stir-fry on MED heat until the veggies are cooked and the spinach has wilted. Mix the cornstarch, soy sauce, mirin, chicken broth, sugar and sesame oil in a small bowl until the sugar dissolves. Add the mixture to the veggies and stir-fry again. The sauce will quickly thicken. Once the sauce is thick and it's all really hot serve it in a bed of rice. Enjoy! Also you can add different veggies if you like.

Banana Pancakes

Hello Friends,

So yesterday wasn't a very good day for me, it was one of  "those" days when everything seemed to make me sad :( But now I'm feeling better, a lot better actually! I've been on a very strict diet since Friday and it's not fun trust me! If you want the diet plan, just let me know in the comments, and I will write a separate post explaining it! But basically in the diet the only things you can eat are fruit, meat, veggies and nuts. So, finding stuff to eat is kinda hard, but I went searching on different cooking websites and blogs and I found something perfect! Now, I can't take credit for this recipe because to be honest this recipe is so bizarre I would have never figured in out on my own! This recipe was found searching "TheOfficialHungry" youtube channel one of the series called "The Brothers Green" had a video making recipes with only 4 ingredients I found there banana pancakes recipe, and simplified it to only 2 ingredients!


Ingredients:

  • 2 bananas. 
  • 2 eggs. 

In a small mixing bowl smash the bananas into a smooth paste, add the eggs and whip the mixture until fully combined. Heat a greased pan on MED heat. Pour a 1/4 cup of the batter into the pan. Let bubbles pop on the top of the cake before flipping. Make sure both sides are golden color before serving. You can serve with anything you want including strawberries and whipped cream ;) Enjoy! Spicy Tacos!

Hello Friends,

This recipe is a easy way to get a fresh healthy meal! I love it! This week has been very different from the rest. Still very busy as usual, but I was a little more relaxed about stuff than usual, and I thinks it's from me eating a little healthier here and there. We hit over 1000 so, contests should start next week, if not than for sure during April. What would you guys want the first prize to be?

Ingredients:

  • 10 yellow corn tortillas.
  • 2 acorn squash.
  • 2 cans of whole black beans.
  • 3 whole limes.
  • 1 spring of fresh cilantro.
  • 5 tablespoons of goat cheese.
  • 1-3 teaspoons of Sriracha sauce.
  • 2 tablespoons of honey.
  • 2 tablespoons of apple cider vinegar.

Cube the acorn squash and set aside. In a large bowl mix the Sriracha, honey and vinegar add the acorn squash and let marinade for 1-2 hours. Fry the squash until soft and hot, set aside. Heat the beans in a pot. Add the juice of the limes in the black beans. Roughly chop the cilantro and add to the beans. Toast the tortillas in a oven set for 350 F for 1 minute and now make your tacos! Layer the squash, beans and crumble the goat cheese on top. You can add a bit more lime juice on top if you like. Enjoy!

Chicken Parmesan.

Hello Friends,

This is a classic Italian dish that most people have heard of! It's perfect if you don't have a lot of time to make dinner. It's high in protein and delicious! I made this the other day for the first time and I ran into a little problem. The week before I had made gluten-free sandwich bread like I normally do, but people weren't feeling up for bread that week so the bread went stale. I decided that the best thing to do with it was to turn it into bread crumbs, so I did. So, when I went to make the Chicken Parmesan I planned on using the bread crumbs that I had made I found that the bread being homemade doesn't last very long so, the bread crumbs had mold :( So I quickly went through my pantry looking for alternatives. In the past I have used crushed Chex rice cereal and that worked pretty good. but I didn't have any....So I grabbed the closest thing! I had tried making oat flour in my food processor, but I couldn't get it fine enough to be a flour, so I put it in a tubberware for another day. Yes, I used fine oatmeal as bread crumbs. Call me crazy, but it was perfect!



Ingredients:

  • 6 skinless and boneless chicken breasts.
  • 1 egg
  • 1 cup of whole milk, you can use coconut or almond milk.
  • 4 cups of gluten-free bread crumbs, you can use also crushed rice Chex or ground oatmeal. 
  • 1 teaspoon of oregano.
  • 1/2 teaspoon of thyme.
  • 1/2 teaspoon of garlic powder.
  • 1/4 teaspoon rosemary.
  • 3 cups of marinara.
  • 2 cups of mozzarella.
  • 1/2 cup of parmesan.

Heat a large pan with oil to MED heat. In a bowl whisk the milk and egg together and set aside. on a large plate mix the bread crumbs, oregano, thyme, garlic powder and rosemary. Make an assembly line of the milk mixture and the seasoned bread crumbs. Dip the chicken breast in the milk mixture then in the bread crumbs and evenly coat both sides, repeat with each piece if chicken. Fry the chicken in the heated pan until golden on each side. In a 9-13 inch baking dish spread a small amount of marinara. Lay the chicken breast on top of the marinara in the baking dish. Sprinkle half of the mozzarella on the chicken and cover with marinara, sprinkle with the rest of the mozzarella and parmesan. Bake at 350 F for 30 minutes or until the cheese is bubbly! Let cool for 5 minutes. Serve by it's self or on a bed of gluten-free pasta. Enjoy!

Sorry!!!!

Hello Friends,


I'm so very sorry about this post being late! I'm going out of town today and getting ready for the trip was keeping me busy! Flaming Lips played last night and I missed it!!!! :( But sometimes earning money is more important that a concert. Also don't forget that 50 more page views and I'm gonna start hosting contests! Whoo! This includes you being able to win stuff such as gf flour, baking wear and cooking wear, fun fun!
So, this recipe is very simple I will be honest, but it's sentimental for me and it's very very good! So I'm gonna share it with you!


Ingredients:

  • 1 head of broccoli.
  • 4 tablespoons of olive oil.
  • 1/2 teaspoon of both salt and pepper.
  • 1 fresh lemon.

Roughly chop the broccoli. Preheat the oven to 400F and line a baking sheet with foil. Toss the broccoli in oil, salt and pepper. Bake for 15 minutes or until a little golden. Once you pull out the tray, squeeze fresh lemon juice on top, makes for a wonderful side dish! So good!!! Enjoy!

Bubble (Boba) Tea!

Hello Friends,

Sorry about the really late post, Tuesday was not the best day. So if you have ever had bubble tea, you know how good it is, but at an average of  $4.00 for the tea plus if you want the reason why you came to get bubble tea that's gonna be another dollar for the little pearls. So 5 dollars for a drink that costs them roughly 25 cents to make is kinda (steep) for my opinion. So this is why I decided to start making my own! I started by going to my local Asian store. I was trying to look for the boba (if they sold it at all) and I did find it, but 5 dollars for a small pack I was still kinda un sure I still thought I could do better, and after searching google for a good 5 minutes I found a boba recipe I tried out different ways to make the tea/smoothie and make homemade boba yum! So I give you final result!



Ingredients: 

  • 1/2 cup of tapioca starch.
  • 1-3 tablespoons of hot water. 
  • 1 of your favorite tea bags (I normally use a peach ginger tea by Stash) 
  • 1 cup of whole milk.
  • 1/2 a cup + 3 tablespoons of brown sugar. 

Start by measuring the tapioca starch in a small bowl. Add the hot water a little at a time and make sure you don't get a dough that too sticky. I've made this so many times and each time the amount of water varies. Once you mixed the dough take it out of the bowl and kneed until a little tacky, but still not too sticky. Make pea sized balls with the dough. Boil the boba in a medium sized pot full of water and 1/2 cup of brown sugar. the boba will double in size. Once the boba have grown strain the water and rinse the boba. Steep your tea and add the remaining brown sugar. If you don't like it very sweet then don't add as much sugar. Put the desired amount of boba in each glass, evenly pour the tea in each glass and fill the rest of the glass with whole milk. Serves 2! This is a great treat for spring break! Baked Lemon Chicken Breast

Hello Friends,

Oh, how I'm embarrassed, this post is late! I was so frazzled yesterday! So I apologize, and give you a delicious recipe! This recipe is easy for a busy weeknight! So here you go!


Ingredients:

  • 1 medium onion (sliced).
  • 1 large lemon (sliced).
  • 5 cloves of garlic (smashed).
  • 3 springs of rosemary. 
  • Olive oil.
  • 10 new potatoes (halved).
  • 3 skinless and boneless chicken breasts (washed and dried).

Start by preheating the oven for 425F. In a baking dish line the slices of onion and lemon in a pattern. Lay the rosemary and garlic on top. In a large bowl put the halved potatoes in and toss with some olive oil, set aside. Take your washed chicken breast and cover in olive oil. Arrange the chicken in the baking dish atop of the lemon, onion, garlic & rosemary. Place the potatoes in the baking dish also. Sprinkle with salt and pepper. Bake for 35-45 minutes or until the chicken is fully cooked (165 degrees). Serve the chicken with the potatoes, so gooooooood! Enjoy!

Sweet Japanese Omelet.

Hello Friends,

It's been a very tiring day for me, I was sent a screamer at 1am and couldn't calm myself enough to sleep until about 3am, yay! -_- So now I'm so tired I could fall asleep on my laptop! But even though I'm a zombie for the day I will write a post for you guys! It's simple, but good! 




Ingr(egg)dients:
  • 2 large eggs.
  • 1 teaspoon of white sugar.
  • 1 teaspoon on soy sauce.

Heat a small pan on MED heat and grease with butter. Mix all the ingredients shown above. Pour the mixture in the heated pan and let cook evenly on both sides. You can serve it as is or serve with rice and soy sauce! Yum! Enjoy!
